He burned those churches due to the lack of respect Christianity showed the Pagan landmarks in his country.
The killing however, I feel that at a certain point, it stopped being self-defence.

That man he killed went by the name of "Euronymous" and Varg killed him because he had heard from one of Euronymous's buddies that he planned to tase him, take him to a forest I think it was, torture him and eventually kill him all while Euronymous is recording. So Varg decides to find Euronymous and stab him in the skull.
