Two cheese penne pasta recipe...
Supplies: bowls, measuring cups, spoons, whisk, colander, 1.5-L baking dish with lid

Ingredients:
2 cups uncooked penne pasta
1 tbsp olive oil
2 cups very warm water
1 cup chicken or vegetable stock
1/2 cup 35% cream
1/3 cup grated Parmesan cheese
1/3 cup ricotta cheese
1/2 tsp dried basil
1/2 tsp garlic salt
Pinch of pepper
1/4 cup ricotta cheese

Makes 4 servings

Penne pasta continued...

1. In a bowl, mix the penne, olive oil and very warm water. Let stand for 30 minutes to soften the pasta.

2. Preheat oven to 425*F (220*C)

3. In another bowl, use a whisk to mix the stock, cream, parmesan, 1/3 cup of ricotta, basil, garlic salt, and pepper.

4. Drain the pasta in a colander. Stir the pasta into the cream mixture. Pour the pasta and creamy liquid into baking dish. Spread the pasta evenly.

5. Use a spoon to drop the 1/4 cup ricotta in 5 small blobs.
