Pineapple Upside-Down Cake

April 19, 2009 is National Pineapple Upside-Down Day!

Go head-over-hells for this yummy, upside-down cake!

1 can sliced pineapple

1/4 cup brown sugar

3 tablespoons melted butter

3/4 cup flour

1/3 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

1 beaten egg

1/4 cup milk

Drain the pineapple.

In a bowl, mix the brown sugar and butter. Pour the mixture into a pan.

Arrange the pineapple slices over the mixture in the pan in one layer.

In another bowl, mix the flour, sugar, baking powder and salt. Add the egg and milk. Spoon the mixture over the pineapple slices.

Bake at 350 degrees F for 30-35 minutes. Let it cool outside the oven for 5 minutes and then flip it over onto a plate.
